Boss, You Mau Apa Roti?: Eating Fusion

In the second episode, join Ilham as she explores the different cultural flavours of mamak food.  

 

Malaysian cuisine is a mix of Malay, Chinese and Indian influences and is generally spicy. Did you know that even nasi lemak can sometimes be considered as a fusion food when it is paired with curry (Indian), veggie assortments (Chinese) and fried chicken (Western)? With so many different flavours, fusion food has become quite popular these days as some restaurants serve dishes that blend Asian and Western flavours together.

 

Ilham’s friend, Rachel, has mentioned that the taste of mee goreng mamak reminds her of hokkien mee, leading to Ilham’s realisation that, actually, kedai mamak incorporates a lot of fusion in their food too! During the process of Ilham’s research on mamak and fusion food, she also found out that one of the core features of mamak restaurants is the fusion selection available on their menu (see table below).

Fusion food is the combination of culinary traditions and flavours to create new and hybrid dishes. Fusion food can also be using ingredients of a culture to prepare dishes that are from another culture. With the arrival of Muslim Indians to Malaysia trying to adapt with the Malaysian environment, kedai mamaks also started to adopt different flavours such as Malay, Chinese and even Western into their mamak dishes.
